I have actually been using this recipe for about 6 months now. I absolutely love them and so does Avery and Jon doesn't complain much either. Because they are HEALTHY for you I'm happy!!! Also with this recipe if I have 3-4 of them for breakfast I don't feel horrible because they are HEALTHY with no extra sweeteners. I use my own peanut butter with no extra sugar so that makes it even healthier.
I don't really measure much, I just estimate, but I'm going to try and put stuff into measurements for you.
This recipe makes app. 24 cookies.
I use everything listed below including the optional things.
3 cups quick oats
2 tsp honey
2 mashed bananas
splash of cinnamon (optional)
1/4 cup apple juice (maybe a little more)
enough peanut butter to make a good consistency
raisins, cranberries or any other dried fruit
Wheat germ (optional)
Ground Flaxseed (optional)
Mix together oats, peanut butter, honey, banana, cinnamon, wheat germ, flaxseed, and fruit. Get a good consistency and add more peanut butter if needed. Add in apple juice, mix well, if it's not cookie dough like add more juice.
Place them on baking sheet and flatten them down a bit, these will not spread like regular cookies, so you can set them closer together also. Bake at 350F for 15-20 minutes.
