Have you ever gotten your rug professionally cleaned?
When we got rid of Bella (big St. Bernard with UTI Issues) last May, we decided to call a rug cleaner and get our carpet done. The results were outstanding. Bella had lots of UTI issues and she was going all over the house. The pee was rancid and even with cleaning it immediately (although she liked to go in the middle of the night!!) it still stained. Stains were everywhere and they were impossible to clean on our own, even with a carpet cleaner.
So we called professionals and they came out and did out carpet for us.

There was still a bit of staining on the carpet, but it was a significant difference and it made the world of difference when you walked in the house.
Before was just embarrassing and it was embarrassing inviting people over.
We had our own deep carpet cleaner, but it just didn't work on these stains. Our carpet is CHEAP and we have a very CHEAP pad too, so it would just pull all the pad stains up to the carpet and leave them there. We may have had to clean it like 5-6 times just to get it clean and I wasn't doing that.
We paid these people $140 to clean This room, Living room, hallway and 2 bedrooms that included deodorizer in the living room and this room!! Seriously it was SO worth it. They were in and out within 25 minutes and it was dry within about 4 hours. It was worth us spending the extra money instead of doing it ourselves!!

Sorry to hear you had to get rid of your St Bernard!
We had a similar situation with our dog and were on the verge of just replacing the whole carpet however we got these guys in from Kleenright and like you said, within half an hour, the place was gleaming!
